Carrot Cake


This delicious carrot cake recipe was given to Sue by Mom Landwehr.

Cake:

2 cups of all purpose flour (sift before measuring)
2 cups sugar
2 tsp cinnamon
2 tsp soda
2 tsp baking powder
1 tsp salt

Begin by sifting together the above ingredients.  To these dry ingredients, add 1 1/2 cups cooking oil and 4 eggs.  Beat with mixer for 3 minutes.  Add 3 cups grated carrots (approx 6 large carrots) and 3/4 cup chopped pecans (or walnuts).  Bake 45-60 minutes at 325 degrees in 14.5 by 10.5 by 2 inch baking dish (no smaller).  This recipe will also make a three layer cake, but cooking times may need to be adjusted. Frosting:  

1/4 cup butter, softened
1 8-oz package cream cheese, softened
1 pound powdered sugar, sifted
2 tsp vanilla

Beat butter and cheese until smooth.  Add vanilla and sugar.  Beat at high speed until mixed.  Frost cake and keep refrigerated.
